Eastern Soft Red Winter
Grown largely in Ontario, with additional production in Quebec and the Atlantic provinces, CESRW is a soft, low protein wheat ideal for cakes, pastry, cereals, crackers, biscuits and fillings. It is easy to mill and typically has a high flour yield resulting in flour that is bright and creamy in colour.

Quality is great this year with very low fusarium damage. Wheat production was high once again in 2021. Although wheat from some regions had low falling numbers (FN), there are still acceptable FN levels in over 80% of the production which graded No. 2 or better.
Grading Factors
No. 1 and No. 2 are above 80%.
Protein
Protein levels are ideal and similar to last year. Gluten strength is slightly weaker than last year but is still acceptable for this wheat class.
Milling Quality
Milling yields are at acceptable levels. Flour yields on a total products basis are higher compared to last year.
Application Performance
Easy-to-manage, versatile and easy to handle during production. Flour absorption is slightly higher than last year which may require adjustments to the amount of water included in product formulations.
